Australia went wild for the Clinkers Slice, so we turned it into the ultimate layer cake, fit to crown any birthday table. Two delicious layers of vanilla cake and a Clinkers-studded cheesecake centre are covered in a fluffy pink buttercream and decorated with even more Clinkers.

The ingredient of Clinkers cake recipe

  1. 400g Cadbury Clinkers
  2. 300g (2 cups) plain flour
  3. 1 3/4 tsp baking powder
  4. 1 tsp salt
  5. 315g (1 1/2 cups) caster sugar
  6. 2 eggs
  7. 250ml (1 cup) milk
  8. 185ml (3/4 cup) vegetable oil
  9. 1 tbsp vanilla extract
  10. 400g cream cheese, at room temperature
  11. 140g (2/3 cup) caster sugar
  12. 2 tsp vanilla extract
  13. Pink gel or liquid food colouring, to tint
  14. 3 tsp gelatine powder
  15. 250ml (1 cup) thickened cream, whipped to firm peaks
  16. 560g unsalted butter, chopped, at room temperature
  17. 600g (4 cups) pure icing sugar, sifted
  18. 1 tbsp vanilla extract
  19. Pink gel or liquid food colouring, to tint

The instruction how to make Clinkers cake recipe

  1. Grease an 18cm round springform pan. Line the base and sides with baking paper. Roughly chop 120g (1 cup) Clinkers.
  2. To make the cheesecake, use electric beaters to beat the cream cheese, sugar and vanilla in a bowl until smooth. Add a few drops of food colouring. Beat until well combined. Place 2 tbs water in a small microwave-safe bowl. Sprinkle with the gelatine and stir to combine. Microwave for 10 seconds (do not overheat). Use a fork to whisk until the gelatine dissolves. Beat into the cream cheese mixture until well combined. Fold in the whipped cream, in three batches, until combined. Fold through the chopped Clinkers. Pour mixture into the prepared pan and smooth the surface. Cover pan with plastic wrap. Place in the fridge for 6 hours, or overnight, until set.
  3. Preheat oven to 180C/160C fan forced. Grease two 18cm round cake pans. Line the base and sides with baking paper. Sift flour, baking powder and salt into a bowl.
  4. Use electric beaters on medium speed to beat the sugar and eggs in a large bowl for 3 minutes or until thickened and well combined. Beat in the milk, oil and vanilla until just combined. With the mixer on low speed, gradually add the flour mixture, beating until just combined. Divide the cake mixture evenly between the prepared pans. Bake for 40 minutes or until a skewer inserted into the centres comes out clean. Set aside in the pans for 10 minutes to cool slightly before transferring to a wire rack to cool completely.
  5. To make the buttercream, use electric beaters on medium-high speed to beat butter in a large bowl for 6-8 minutes or until pale and creamy. Add the icing sugar, vanilla and a pinch of salt. Reduce speed to low and mix until combined. Increase speed to medium-high and beat for 6-8 minutes or until fluffy. Add a few drops of food colouring to tint. Beat until well combined.
  6. Roughly crush 6 of the remaining whole Clinkers. Slice each of the remaining Clinkers crossways into 4 pieces.
  7. Use a serrated bread knife to trim the top of each cake if needed. Use a little of the buttercream to secure one cake, base-side down, on a serving platter or board. Spread 1/2 cup of the buttercream over the top of the cake. Remove the cheesecake from the fridge and release from the springform pan. Remove baking paper from the side. Invert cheesecake on top of buttercream layer. Remove baking paper from the base of the cheesecake. Spread 1/2 cup of the buttercream over the top of the cheesecake. Top with the remaining cake, base-side up. Spoon 1 1/2 cupfuls of buttercream into a piping bag fitted with a fluted nozzle. Spread remaining buttercream over top and sides of the cake. Use a palette knife or cake scraper to smooth the top and side of the cake to remove any excess buttercream, if necessary.
  8. Attach reserved sliced Clinkers to the buttercream on the side of the cake, pressing gently to secure. Use reserved buttercream to pipe rosettes around the top edge of the cake. Sprinkle rosettes with crushed Clinkers.
