The ingredient of Baked double-cheese gnocchi

  1. Melted butter, for greasing
  2. 150g mild blue cheese (like Blue Castello)
  3. 200g provolone cheese
  4. 2 tablespoons chopped fresh chives
  5. Ground black pepper
  6. 80ml (1/3 cup) thin cream
  7. 2 tablespoons Californian walnuts, chopped
  8. 1.5kg small even-sized desiree potatoes
  9. 1 teaspoon salt
  10. Ground black pepper
  11. 200g (1 1/3 cups) plain flour
  12. Extra plain flour, to dust

The instruction how to make Baked double-cheese gnocchi

  1. Preheat oven to 210u00b0C. Brush a 5cm deep, 2.5 litre (10 cup) ovenproof dish with the melted butter to lightly grease.
  2. Make gnocchi following steps 1 to 3 of the basic potato gnocchi recipe, then cut into 4 equal portions. Use your hand to flatten 1 portion of dough on a lightly floured surface until about 1cm thick. Use a lightly floured, round 5cm cutter to cut dough into discs. Transfer to a large tray lined with a lightly floured tea towel. Repeat with remaining portions of dough, including the offcuts.
  3. Cut blue cheese into cubes and thinly slice the provolone. Cook gnocchi following step 6 of the basic potato gnocchi recipe . Transfer each batch of gnocchi to the greased dish, sprinkle with 1/4 each of the blue cheese, provolone and chives, then season with pepper. (Reduce proportions if cooking gnocchi in more than 4 batches.)
  4. Pour the cream over the top and then sprinkle with walnuts. Bake in preheated oven for 15-20 minutes or until the top is browned and bubbling. Serve immediately.
