This perk-me-up cake is choc-a-block full of flavour.

The ingredient of Mocha cake

  1. 200g good-quality dark chocolate, chopped
  2. 100g butter, chopped
  3. 100g caster sugar
  4. 100ml milk
  5. 2 tsp ground instant coffee
  6. 1 tbsp rum
  7. 4 eggs, beaten
  8. 1 1/3 cup (200g) self-raising flour
  9. 200g good-quality dark chocolate, chopped
  10. 40g butter, chopped

The instruction how to make Mocha cake

  1. Preheat oven to 180u00b0C. Line a 20cm round cake pan with non-stick baking paper. Place the chocolate, butter, sugar and milk in a saucepan. Stir over a low heat until smooth.
  2. Transfer the mixture to a large bowl. Stir in the instant coffee and rum. Set aside to cool.
  3. Add the eggs and flour, and stir until well combined. Pour into the pan. Bake for 50 minutes or until a skewer inserted comes out clean. Set aside to cool completely.
  4. To make the icing, stir the chocolate and butter in a heatproof bowl over a saucepan of simmering water until smooth.
  5. Cut the cake in half horizontally to make two layers. Spread some of the icing between the two layers. Sandwich together and spread the remaining icing over the cake.
