  1. 415g can red salmon, drained, flaked
  2. 1/3 cup lemon and dill mayonnaise
  3. 3 hard-boiled eggs, peeled, chopped
  4. 5 sheets shortcrust pastry
  5. 1 egg, beaten

The instruction how to make Little salmon and egg pies

  1. Preheat oven to 200u00b0C. Line 2 baking trays with baking paper.
  2. Combine salmon, mayonnaise and eggs in a bowl. Season. Mix well.
  3. Cut 8 x 8cm circles from each sheet of pastry. Place salmon mixture, 2 heaped teaspoonfuls at a time, into the centre of half the pastry circles. Brush edges with water. Top with remaining pastry circles. Press edges together with a fork.
  4. Place pies onto baking trays. Brush with egg. Sprinkle with salt and pepper. Bake for 15 to 20 minutes or until pastry is golden and cooked through. Serve hot or cold.
