The ingredient of Roasted vegetables with thyme & yoghurt bearnaise sauce

  1. 6 (about 150g each) baby fennel bulbs, trimmed
  2. 1 bunch (about 4 bulbs) beetroot, unpeeled, trimmed, scrubbed
  3. 1 tablespoon olive oil
  4. Salt & ground black pepper
  5. 10 black peppercorns
  6. 60ml (1/4 cup) white wine vinegar
  7. 60ml (1/4 cup) dry white wine
  8. 60g (about 2 large) eschalots, peeled, finely chopped
  9. 1/3 cup finely chopped fresh thyme leaves and stems
  10. 3 egg yolks, at room temperature
  11. 90g butter, at room temperature, cubed
  12. 70g (1/4 cup) Greek-style natural yoghurt
  13. 1 tablespoon thyme leaves, extra
  14. Salt & ground black pepper

The instruction how to make Roasted vegetables with thyme & yoghurt bearnaise sauce

  1. Preheat oven to 180u00b0C.
  2. To make the thyme & yoghurt bearnaise sauce, follow steps 1 to 4 in the bearnaise sauce recipe (see related recipe) using the ingredients listed here (except the yoghurt and extra thyme). When all the butter is added, transfer the sauce to a clean jug or bowl. Cover the surface of the sauce with plastic wrap to prevent a skin forming and place in the fridge for 2 hours to chill.
  3. Meanwhile, halve the fennel bulbs lengthways. Place the fennel and beetroot in a medium roasting pan and add the oil, salt and pepper. Toss until the vegetables are well coated. Cover with foil and bake in preheated oven, turning the vegetables halfway through cooking, for 2 hours. Remove the pan from the oven.
  4. Put on clean rubber gloves and peel the beetroot while it is still hot. Cut the beetroot into wedges. Divide the beetroot and fennel among serving bowls.
  5. Stir the yoghurt and extra thyme leaves into the bearnaise sauce. Taste and season with salt and pepper. Drizzle some sauce over the vegetables and serve remaining sauce separately.
