The ingredient of Sausage and vegetable bake

  1. 12 chipolata sausages
  2. 2 celery stalks, trimmed, sliced
  3. 1 onion, thinly sliced
  4. 1 garlic clove, crushed
  5. 2 cups passata
  6. 1 zucchini, halved lengthwise, sliced
  7. 1 finger eggplant, halved lengthwise, sliced
  8. 1/4 cup stuffed green olives
  9. 2 tablespoons parsley leaves
  10. Mashed potato to serve

The instruction how to make Sausage and vegetable bake

  1. Preheat oven to moderate, 180C.
  2. Heat a large frying pan on high. Cook sausages for 4-5 mins, turning, until golden all over. Transfer to a 20 x 30cm shallow baking dish.
  3. Sautu00e9 celery, onion and garlic in same pan on high for 2-3 mins. Stir in passata, zucchini and eggplant and season to taste. Bring to the boil. Pour over sausages.
  4. Cover dish with foil and bake for 10-15 mins. Top with olives and parsley. Serve with mashed potato.
