- 12 chipolata sausages
- 2 celery stalks, trimmed, sliced
- 1 onion, thinly sliced
- 1 garlic clove, crushed
- 2 cups passata
- 1 zucchini, halved lengthwise, sliced
- 1 finger eggplant, halved lengthwise, sliced
- 1/4 cup stuffed green olives
- 2 tablespoons parsley leaves
- Mashed potato to serve
The instruction how to make Sausage and vegetable bake
- Preheat oven to moderate, 180C.
- Heat a large frying pan on high. Cook sausages for 4-5 mins, turning, until golden all over. Transfer to a 20 x 30cm shallow baking dish.
- Sautu00e9 celery, onion and garlic in same pan on high for 2-3 mins. Stir in passata, zucchini and eggplant and season to taste. Bring to the boil. Pour over sausages.
- Cover dish with foil and bake for 10-15 mins. Top with olives and parsley. Serve with mashed potato.
