  2. 6 (375g) extra-lean Italian-style sausages
  3. 1/3 cup whole-egg mayonnaise
  4. 2 tablespoons lemon juice
  5. 100g baby spinach
  6. 4 hard-boiled eggs, peeled, quartered

  1. Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over medium-high heat. Reduce heat to medium. Cook for 15 to 17 minutes or until tender. Drain. Cut into quarters. Place in a large bowl.
  2. Meanwhile, heat a greased chargrill pan over medium-high heat. Cook sausages, turning occasionally, for 10 to 12 minutes or until cooked through. Remove from pan. Thinly slice diagonally.
  3. Whisk mayonnaise and lemon juice in a bowl. Season with salt and pepper.
  4. Add sausage and spinach to potato mixture. Pour over dressing. Toss to combine. Add egg. Serve.
